<h2>Ingredients</h2>
<h1>Meat</h1>
<ul>
<li>I used leftover pork shoulder. Use whatever you have around; lime grilled chicken is nice.</li>
</ul>
<h1>Vegetables</h1>
<ul>
<li>1/2 Onion, thinly sliced. I sliced mine reallllly thin. Use white or red or both.</li>
<li>2 Hot Cherry Peppers from the jar, seeded and finely chopped.</li>
<li>Avocados</li>
</ul>
<h1>Herbs &amp; Spices</h1>
<ul>
<li>Homemade chili powder. Make it yourself so you know what the heck&#8217;s in it.</li>
<li>Cilantro, chopped.</li>
</ul>
<h1>Oils</h1>
<ul>
<li>Homemade Chili Oil. Mine is not very hot, but has a nice color. Use whatever oil you prefer.</li>
</ul>
<h1>Cheeses</h1>
<ul>
<li>Mexican 3 Cheese Blend in the package. Again, any shredded cheese would work.</li>
</ul>
<h1>Wrappers</h1>
<ul>
<li>Flour tortillas. Warm them through just before assembling the tacos. I do not like corn tortillas. Like you care.</li>
</ul>
<h2>Get The Show On the Road</h2>
<p>Start out by sauteing the onions in a splash of oil over medium heat. (TIP: Use a clear restaurant style ketchup/mustard squeeze bottle for this. It&#8217;s much easier than a big bottle.) While that&#8217;s going, sprinkle your meat with the chili powder, some salt and pepper and chop it up into tiny bits. Chop your cherry peppers and mix that in with the chopped meat. When the onions are cooked through and browning a bit add in the chopped meat and a splash of fresh lime juice. Mix it all up well and remove it from the heat.</p>
<h2>Put Those Babies Together</h2>
<p>Warm your tortillas and lay them all out on the board. First sprinkle a bit of cheese on each tortilla in &#8220;assembly line&#8221; fashion. Follow with some meat and onions on each. Finish with a bit of fresh homemade salsa, chopped avocado and cilantro.</p>
