Toasted Walnut Chicken Salad With Dates and Raisins

I was inspired after find a cranberry-walnut chicken salad over here. This recipe called for cranberries, which I did not have, so I had to improvise/substitute/experiment – which is what I like to do more than follow recipes to the T.

Ingredients:

  • 1/4 cup dates
  • 1/4 cup raisins
  • 1/2-2/3 cup mayo
  • 2-3 sprigs worth of fresh thyme leaves
  • 2-3 tablespoons of chopped fresh cilantro
  • 1/3 cup walnuts, toasted
  • 2 tablespoons dijon mustard
  • 1 florida cherry pepper, from a jar (pickled?), diced
  • 1/4 cup diced red onion
  • salt & pepper, to taste
  • 1 teaspoon sugar
  • 2 cups or so of grilled chicken, cut up

Directions:

Combine all the ingredients. Serve as a side dish or on some buttered toast or a bagel or whatever! I found that this salad was even better the next day.
